Kudos Kitchen Forum
The kudos chefs' forum is a meeting of minds between all of the head chefs within kudos hospitality
The objective of this format is to give everybody an opportunity to voice their ideas and opinions regarding a variety of topics, and indeed to gleam as much shared information from the other attendees as possible.
It also provides a stable platform for benchmarking the standards in food quality, presentation, innovation, food safety and sustainability throughout the company.The forum system works by involving all the head chefs from all the venues, they are set objectives which are followed up with the minutes form the forum, we have then set up subsidiary regional forums that will be held quarterly in-between the bi-annual one run by myself, this gives added impetus for the topics discussed and objectives set to actioned and followed up.
There were a plethora of projects discussed in the inaugural forum. 1st was the chefs awareness of sustainability and food miles and the impact this has on produce, costs and availability of products within the company, and how we can maximise the understanding of what this means and the effect it has on the business and environment.
2nd was the problems experienced with suppliers, the reasons behind the tender processes and what this means as a company and how we can report and react to the hiccups that occur.3rd was the setting up of a much closer communication network between venues including such topics as staffing, equipment, menu and product development and recipes.
Projects such as client tasting criteria, chefs signature dishes etc were also discussed and objectives set.
